100% Pure Cacao Paste

Nobi's cacao comes from Lachuá, in Guatemala's Alta Verapaz region, home to the Criollo variety, considered the rarest and most prized cacao in the world. The beans are organically grown to export quality and wood-fire roasted for a distinct smoky character, then stone-ground into a pure, single-ingredient chocolate with nothing added. It's the same plant, prepared the same patient way, that has nourished this land for generations.

Nobi also welcomes guests to learn the process firsthand. Their on-site workshop covers 5,000 years of Maya cacao history, a tasting of cacao from three regions of Guatemala, and hands-on time roasting over a comal, grinding with a stone mill, and whisking chocolate with a molinillo.

Tucked in San Antonio Aguas Calientes, in the highlands of Sacatepéquez, Nobi began in 2017 with a simple observation: Guatemala had far more to offer the world than its market was capturing. What started as a vision to create something original from purely Guatemalan materials has grown into a team of families who've come together, each bringing their own skills in growing, creating, and producing, to build something larger than any one of them could alone. Every item Nobi makes carries a dual purpose: honoring the land and culture it comes from, while creating real, dignified work for the people who call this region home. When you hold one of their products, you're holding a piece of that intention, a small act of pride made tangible, shaped by many hands working in common cause.
